The hot tub I have is 9 years old but was approximately $12,000 to replace. The insurance adjuster reports that I have to settle for 5% decrease in depreciation for every year the hot tub is old. This means that I will only get paid approximately $5,000 to go towards a new hot tub. Is there any way to boost that number?

You never have to accept the offer of an insurance adjuster.  Most claims are paid on depreciated value.  If replacement cost coverage is elected it covers only buildings and contents.  Many things are specifically excluded.  It appears that your adjuster does not consider your hot tub as a covered item for replacement coverage.  That is his opinion.
